
Gluten-Free Waffles with Ice Cream & Raspberry Sauce

A taste of summer for the whole family – completely gluten-free.
Ever since the celiac diagnosis, our waffle iron has become a staple in our kitchen: freshly baked waffles are simply always a highlight, whether in summer with ice cream or in winter with powdered sugar. Fun fact: right after the diagnosis we bought a new waffle iron – and since then, it’s been in use all year round.
Ingredients (makes about 6 portions)
- 90 g soft butter
- 75 g sugar
- 1 pinch of salt
- 2–3 eggs (depending on size)
- 225 g gluten-free all-purpose flour
- 1 ½ tsp gluten-free baking powder
- 250 ml almond milk
- A little cinnamon

To serve:
- 1 scoop gluten-free vanilla ice cream (e.g. Florida Eis)
- Raspberry sauce on top
Preparation
- Cream together the butter, sugar, and salt.
- Beat in the eggs one at a time until smooth.
- Mix the gluten-free flour, baking powder, and cinnamon. Add to the batter alternately with the almond milk and mix well.
- Preheat the waffle iron and lightly grease with coconut oil or butter.
- Bake golden waffles one portion at a time.
Serve warm with a scoop of vanilla ice cream and raspberry sauce – and enjoy the perfect summer treat!

Tips
- We always freeze a few extra waffles – just pop them in the toaster, and they’re delicious again.
- Oat milk or regular milk works just as well as almond milk.
- Vary with seasonal fruit: strawberries in summer, apples in autumn – or warm fruit in winter.
- Also a classic simply dusted with powdered sugar or cinnamon sugar.
